Why the cheapest calories are the least nourishing — and what to do about it.

Most people assume the food on the shelf is priced by what it costs to grow and what it does for your body. It isn't. It's priced by policy, subsidy, shelf-life, and margin. The result is a system where the most abundant, most advertised, most affordable calories are often the ones that feed you least. A useful habit when looking at any large system: follow the incentives. You don't have to assume bad intent to explain a bad outcome. Follow the subsidies.

In the United States, farm policy has for decades directed the largest share of commodity support toward a short list of crops: corn, soybeans, wheat, rice, and sugar. These are the raw inputs of cheap processed food — corn becomes high-fructose corn syrup, starch, and animal feed; soy becomes industrial oil and feed; sugar is sugar.

Fruits and vegetables, by contrast, are officially termed 'specialty crops' and receive a small fraction of that direct support. The open question worth sitting with: if public policy makes the building blocks of soda and snack food structurally cheaper than the building blocks of a salad, what would you expect the cheapest calories to be made of?

The commodity core

Corn and soy dominate American acreage. A large share never reaches a dinner plate in recognizable form — it becomes livestock feed, ethanol, industrial oils, and the sweeteners and starches inside packaged food. Cheap corn and soy make cheap calories, and cheap calories make cheap products.

The price signal

Subsidies and scale push the per-calorie cost of refined sugar, refined oil, and refined starch down and down. Fresh produce, which spoils, needs cold chains, and gets far less support, stays comparatively expensive. Families on tight budgets respond rationally to the price signal in front of them — the problem is the signal, not the shopper.

The critics' argument

Critics of farm policy across the political spectrum argue the subsidy structure is a legacy of Depression-era programs that never fully unwound, now sustained by concentrated agricultural lobbies. Defenders argue it stabilizes farm income and food supply. Both can be partly right — and either way, the downstream effect on what's cheap is documented and real.

The economics of ultra-processed food.

Ultra-processed food is not just 'junk food' — it's a well-described category in nutrition research (often called the NOVA group 4) covering formulations built largely from industrial ingredients and additives rather than whole foods. It now makes up a majority of the calories consumed in the average American diet, especially for children. Understanding why is mostly an exercise in business math.

  • Cheap inputs — built from subsidized corn, soy, sugar, and refined oils, the raw material cost is low.
  • Long shelf life — engineered to sit on a shelf for months, which slashes spoilage loss and makes national distribution easy.
  • High margin — turning a few cents of commodity input into a branded package is where the profit lives, far more than in selling a head of lettuce.
  • Engineered palatability — formulated at precise combinations of sugar, fat, salt, and texture that make it easy to overeat, which sells more product.
  • Massive marketing — a product that scales nationally can support advertising budgets that fresh, local food never can.

The documented gap is this: a growing body of research links diets high in ultra-processed food to higher risk of obesity, type 2 diabetes, and cardiovascular disease, and at least one tightly controlled feeding study found people ate significantly more calories and gained weight on an ultra-processed diet versus a whole-food diet matched for nutrients.

The open question isn't whether these foods are profitable — clearly they are. It's whether a food supply optimized for shelf-life and margin can also be optimized for human health, and so far the evidence suggests those goals pull in different directions.

Chemical agriculture and the incentive to spray.

The same logic extends to how the raw crops are grown. Industrial monoculture — vast fields of a single crop — is efficient for machinery and yield, but it strips soil biology and invites pests, which creates a standing demand for synthetic fertilizers, herbicides, and pesticides. That demand is a market, and markets defend themselves. Follow the incentive: the companies that sell the seed often sell the chemical the seed is engineered to tolerate.

The residue question

Documented gaps include the fact that many synthetic pesticide and herbicide residues are permitted on food at 'tolerance' levels set by regulators, and that the long-term effect of chronic low-dose exposure to mixtures of these chemicals is far less studied than the effect of any single compound tested alone. Critics argue real diets contain combinations, not isolated single doses. This is an open, actively litigated area — not a settled verdict either way.

The soil question

Decades of tillage and synthetic inputs are associated with measurable declines in soil organic matter and, some researchers argue, in the mineral density of the crops themselves. The counter-argument

In fairness: industrial agriculture also dramatically raised yields and helped feed a growing world, and its defenders note that 'natural' does not automatically mean 'safe.' That's exactly what regenerative agriculture sets out to do.

The alternative: a whole-food-first way to eat.

Here is the good news, and it's bigger than the bad news: you do not have to fix federal farm policy to eat well this week. The single most powerful move available to almost everyone is to shift the center of your diet from packaged products back to whole foods — foods with one ingredient, or a short list of ingredients you recognize. You capture most of the benefit from the first, easiest changes.

  • Whole-food-first — build meals around foods that don't need a label at all: vegetables, fruit, eggs, fish, meat, legumes, nuts, and seeds. If it grew or grazed, it's a strong default.
  • Shop the edges — the perimeter of most stores holds the produce, meat, and dairy; the center aisles hold the ultra-processed core. Spend most of your money and time on the edges.
  • Cook at home — home cooking is the highest-leverage health habit there is, because it puts you back in control of ingredients, oils, salt, and portion. Simple beats fancy. A repeatable set of five easy meals changes everything.
  • Read the label, then the ingredients — the ingredient list tells the truth the marketing hides. Fewer ingredients, words you recognize, and no long tail of additives is a reliable filter. If sugar or a refined oil is in the first three ingredients, treat it as a treat, not a staple.
  • Buy the cleaner version when it matters — you don't have to buy everything organic. Prioritize it for the thin-skinned produce you eat most, and don't let 'all or nothing' stop you from doing the achievable part.

Local, regenerative, and back in relationship with your food.

Beyond your own kitchen, the most hopeful shift in food is the return of farms that rebuild the land instead of mining it. Regenerative agriculture — cover cropping, rotational grazing, minimal tillage, real biodiversity — aims to restore soil life, hold water, and produce more nutrient-dense food, while cutting the chemical dependence that industrial monoculture creates. When you can source from farms like these, you are voting with the most powerful ballot you have: your grocery budget.

Find your local farms

Farmers markets, farm stands, CSA boxes (a weekly share direct from a farm), and food co-ops connect you to growers you can actually ask questions of. 'How do you raise this?' is a question a good farmer loves to answer — and a question a package can never answer honestly.

Prioritize where it counts

If budget is tight, spend the premium on the foods where sourcing matters most to you — pastured eggs and meat, or the produce your family eats every day — and keep the pantry staples economical. Progress beats purity.

Grow a little, if you can

Even a few pots of herbs or a small raised bed re-establishes the most basic relationship there is: you and the thing that feeds you. It changes how you taste and how you shop, far out of proportion to the calories it produces.
